Pumpkin French Toast for breakfast at the Parish House Inn, an Ann Arbor/Ypsilanti area bed and breakfast

Guests at the Parish House Inn love this Pumpkin French Toast and it is perfect for the Holiday season as it is assembled the night before and finished cooking in the morning. Serve with bacon or sausage, fresh fruit and coffee and delight your family and friends. Enjoy!



PUMPKIN FRENCH TOAST

Serves 6



1 loaf (1 pound) unsliced Challah style bread

1/4 cup sugar

1/4 teaspoon ground cinnamon

1/4 teaspoon ginger

a pinch of coarse salt

1/2 cup canned pumplin

1/2 cup half-and-half

4 large eggs

2 tablespoons orange flavored liquer or orange juice

1 teaspoon vanilla extract

1/2 teaspoon grated orange rind

6 tablespoons butter for frying

maple syrup to serve



1. Trim ends of bread and cut crosswise into 12 1-inch slices.

2. Combine sugar, cinnamon, ginger and salt in a medium bowl. Whisk in the pumpkin, half-and-half, eggs, liquer, vanilla and orange zest. Pour mixture into a large baking dish.

3. Add bread slices to the pan, turning to coat both sides. Cover pan with plastic wrap and refrigerare overnight.

4. Preheat oven to 250o. Heat 2 large skillets over meduim low heat and add 1 tablespoon butter. When butter is sizzling, add 2 bread slices to each skillet and cook until bread is golden brown, about 2 -3 minutes per side. Transfer the slices to a baking sheet; keep warm in the oven until serving. repeat with remaining butter and bread.

5. Serve with remaining butter and warm maple syrup.

There are a lot of fun things to do in Ypsilanti these days. One event that has become a "must see" event is "Opera on Tap" presented the first Tuesday of every month at Frenchie's at Sidetrack Bar & Grill, 56 East Cross Street, in Ypsilanti's Depot Town. Plan to attend the next performance, "Christmas! Christmas!", Tuesday, December 6, at 8:30PM for an evening of good cheer, great beer and all the live music you can stand.
Opera on Tap's mission is to bring opera and classical music out of the conert hall and into alternative venues. Originally formed in NYC, the Ann Arbor/Ypsi chapter is more than two years old and provides young singers an opportunity to perform the music of contemporary, classical and operatic composers.

German Sausage Loaf served at the Parish House inn, an Ann Arbor/Ypsilanti area bed and breakfast

This is a delicious was the signature dish of a bed and breakfast that closed many years ago, and I thank them for sharing it with us. At the Parish House Inn, it is a nice addition to breakfast with scrambled eggs, quiche or even pancakes. The addition of apples and the herbs to the sausage micture adds wonderful flavor and aroma. Enjoy!




GERMAN SAUSAGE LOAF


makes 2 small loaves, each loaf makes up to 6 servings.



1 pound Jimmy Dean Sausage with sage (your favorite brand will also work)

1 medium apple (Granny Smith or Ida Red are good)

1 medium red onion

2 cups Pepperideg Farm stuffing mix (your favorite will work)

2 large eggs

Herbs de Provence


1. Preheat oven to 325o.

2. Spray the bottoms of 2 small loaf pans with nonstick cooking spray and line with aluminum foil; this will help removing the loaf easier. Spray the foil as well. Then sprinkle liberally with the Herbs de Provence, tapping out any excess.

3. Cut the apple into quaters and remove seeds. Cut ends off the onion and peel. Grate both the apple and the onion into a large mixing bowl and pour out excess liquid. Add the sausage, eggs and stuffing mix; thoroughly mix by hand. Place equal amounts in both pans, pressing down to remove any voids. At this point you can cover one pan with aluminum foil and freeze until needed.

4. Place pans on a cookie sheet ( to catch any overflow) and then in the center of the oven. Bake for 50-60 minutes, until the top is brown and a thermometer registers 160 degrees.

5. Remove the sausage loaf by inverting the pans. This may require running a knife around the four sides of the pan. Remove and discard the foil, cut into 1/2 inch slices, place on a serving dish and garnish with parsley or rosemay.

6. When you are ready to use the frozen portion, defrost if overnight in the refrigerator and bake as described.

Since 1934, Haab's Restaurant has been serving delicious meals in
Downtown Ypsilanti. This month they are celebrating their 77th
anniversary on Monday, October 17, as they have since 1981,
with 3 menu items from 1934 and sold at 1934 prices. The menu
items are Chicken in the Basket with French Fries and a Biscuit and Honey for 50 cents, Spaghetti and Meat Sauce for 40 cents, or Barbequed Sandwich with French Fries for 20 cents. They will be serving from 11AM until 9PM, and the line begins forming very

APPLE CIDER-CARDAMOM SYRUP



Combine 1 talespoon cornstarch and 1/4 teaspoon cardamom in a small saucepan. Slowly whisk in 1 cup apple cider. Bring to a boil over medium heat, whicking until mixture boils and thickens, about 3 minutes. Remove from heat. Serve warm over pancakes and waffles.....Enjoy!

Parish House Inn, and Ann Arbor/Ypsilanti bed and breakfast Pear Upsidedown Cake recipe

This is a cake recipe that uses fresh pears and raspberries that are available from the Fall to Spring. You can serve it with the raspberry sauce or just a dollop of whipped cream. Enjoy!


PARISH HOUSE INN

PEAR UPSIDE-DOWN CAKE WITH RASPBERRY SAUCE


Yield: 4 -6 servings


2 tablespoons fesh lemon juice

2 pears, peeled, halved and cored

1/4 cup butter melted

3 tablespoons firmly packed dark brown sugar

1/2 cup fresh raspberries


1/2 cup butter softened

3/4 cup sugar

1 egg

1 2/3 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup milk

2 teaspoons grated lemon rind

1 teaspoon vanilla extract


Preheat oven to 350 degrees. Sprinkle lemon juice over pears; set aside.


Combine 1/4 cup melted butter and dark brown sugar in an 8 inch square pan. Place 1 raspberry on the cored pear half and place core side down on the sugar mixture. Scatter remaing raspberries between, saving 4 for garnish.


In a medium bowl, cream 1/2 cup butter, gradually add sugar and beat well. Add the egg and beating well. Sift together flour, baking powder and salt, and add to creamed mixture alternately with the milk, ending with the flour mixture. Beat well after each addition. Stir in lemon rind and vanilla.

Spoon the batter over pears in the prepared pan and bake for 50 minutes or until a toothpick comes out clean. Remove from the oven and immediately turn it upside down onto a plate. Let it rest for a few minutes before serving. This can be served hot , at room temperature or cold. with or without the sauce....but it will be more delicious with the Raspberry Sauce.


RASPBERRY SAUCE


Yield; 2 1/2 cups



1 (10 ounce) package frozen raspberries. thawed

1/2 cup hot water

1 tablespoon fresh lemon juice

1/3 cup sugar

1 tablespoon cornstarch

1/4 teaspoon salt

2 tablespoons kirsch or other cherry flavored liquer (optional)


Drain raspberries, reserving liquid. Set aside.


In a medium saucepan, combine reserved raspberry liquid, water, lemon juice, cornstarch and salt. Bring to a boil; reduce heat to medium and stir constantly until mixture begins to thicken.

Add reserved raspberries and continue to cook for 3 minutes. Remove from heat and stir in the kirsch. Cover and refrigerate until ready to use.

Blueberry Sauce served at Parish house Inn, an Ann Arbor/Ypsilanti area bed and breakfast

At the Parish House Inn we use this Blueberry Sauce to top pancakes and Fremch toast while fresh bluberries are in season.....Enjoy!


Fresh Blueberry Sauce


2 cups granulated sugar

1 teaspoon cinnamon

4 tablespoons cornstarch

1 cup water

1 cup orange juice

2 cups fresh blueberries

(can use frozen)


1. In a 1 quart saucepan, mix together sugar, cornstarch and cinnamon.

2. Add water and orange juice stirring to mix thoroughly. Cook over medium heat until thickened.

3. Add blueberries and simmer for 10 minutes, or until berries have burst, stirring occasionally.

You can add more water if the sauce becomes too thick.

4. Serve with pancakes and French Toast. Refrigerate leftover sauce.

Rhubarb Crunch recipe from Parish House Inn, An Ann Arbor/Ypsilanti area bed and breakfast

PARISH HOUSE INN RECIPE
RHUBARB CRUNCH
Yield: 4 servings

The dark brown sugar gives this a flavor boost.
This Springtime favorite is delicious with the addition of strawberries.

3/4 cup granulated sugar
2 tablespoons all purpose flour
1/2 cup water
4 cups coarsely chopped rhubarb (or 2 cups rhubarb and 2 cups coarsely chopped strawberries)
1 cup rolled oats
1/2 teaspoon cinnamon
1/2 cup dark brown sugar, packed in the cup
1/4 cup butter, softened
1 cup chopped pecans or walnuts

1. Preheat oven to 350o. Coat a 9x9x2 inch baking pan with cooking spray.
2. In a 1 quart saucepan mix together granulated sugar and flour; then stir in water and mix together. Cook over medium heat until thick. Add the rhubarb and stir to mix.
3. In a small bowl, mix together oats, dark brown sugar, cinnamon and butter.
4. Pour rhubarb mixture into prepared pan. Sprinkle oat mixture evenly over the top.
5. Bake for 30 minutes until top is medium brown and the filling is bubbly in the middle.
6. Serve warm with ice cream and enjoy!!!

Asparagus Casserole Recipe

The Parish House Inn, an Ann Arbor/Ypsilanti area bed and breakfast, serves this dish with slices of ham for a delicious Springtime treat for breakfast or your Easter dinner. It is also a great way to use those hard cooked Easter eggs.
ASPARAGUS CASSEROLE
serves 5

Preheat oven to 375 degrees.

2 cups asparagus, cut into pieces and cooked just until tender
4 eggs, hard-cooked and sliced
1 cup, 4 ounces shredded cheddar cheese
1 to 3 tablespoons butter
1 (10-3/4 ounce) condensed mushroom soup
1 tablespoon sesame seeds
10 biscuits (canned or homemade)

In a 9X9X2 inch oven safe casserole dish that has been coated with cooking spray layer half the asparagus, sliced eggs, cheeses and dot with butter. Repeat layers. Spoon soup evenly over the layers. Bake for 15minutes or until bubbly.
Sprinkle sesame seeds on a plate and press one side of each biscuit firmly into the seeds. Arrange biscuits evenly on top of the hot mixture/ Return to the oven and bake an additional 18 - 20 minutes, or until biscuits are a deep golden brown.
Serve hot from the oven and enjoy!

Oatmeal Scones for St. Patrick's Day at Parish House Inn

The Parish House Inn, an Ann Arbor/Ypsilanti area bed and breakfast, serves up these yummy oatmeal scones for breakfast on St. Patrick's Day ...along with corned beef hash and eggs.
Celebrating the Irish Oatmeal Scones
Yield: 12 scones

1 3/4 cups all purpose flour
1/3 cup sugar
1 1/2 teaspoon baking powder
3/4 teaspooon baking soda
1/2 teaspoon salt
3/4 cup cold butter
1 teaspoon grated orange rind
3/4 cup currants
1/3 cup old fashioned oatmeal
1/2 cup buttermilk
1 large egg, lightly beaten for glaze
extra granulated sugar for topping

Preheat oven to 400 degrees. Coat a baking sheet withy cooking spray.


Combine flour, sugar, baking powder, baking soda and salt. Cut in butter with pastry blender or 2 knives until mixture is crumb ly. Mix in oatmeal, orange rind and currants. Stir in buttermilk and lightly mix just until it forms a sticky but manageable dough.

Turn onto a lightly floured surface and knead 5 -6 times. Roll into a 1 inch thick rounf. With a 3 inch round cutter dipped in flour, cut as many rounds as possible. Gather scraps and re-roll.

Transfer dough to prepared pan. Brush gently with beaten egg and sprinkle with granulated sugar if desired.
Bake for 20 minutes or unti; golden brown. Serve warm with butter and jam. Enjoy!

The Parish House Inn, the Ann Arbor/Ypsilanti area bed and breakfast is located in the second oldest city in Michigan where many interesting events occurred. This is little know fact I share in recogition of Black History month this February.
Elijah McCoy (1843-1929) who was a resident of Ypsilanti and an African-American, was the inventor and patent holder for numerous mechanical devices including the self-lubricator known as "The Real McCoy"....meaning the real thing!

Parish House Inn recipe for Orange Croissant French Toast


This recipe is made when you have time, frozen and then baked and served when you want. At the it is topped with fresh strawberries, raspberries and blueberries and a sprinkling of powdered sugar, which makes for an elegant presentation. Enjoy!

ORANGE CROISSANT FRENCH TOAST


4 egg
5 ounces evaporated milk
1/2 cup orange juice
1 tablespoon grated orange rind
1 tablespoon sugar
6 large croissants, 1 day old, split in half

In a shallow dish, combine eggs, evaporated milk, orange rind, orange juice and sugar.
Dip both sides of the croissant in the egg mixture. coating thoroughly.
Place slices in a single layer on a baking sheet that5 has been covered with foil. Place in the freezer for 30 minutes or until firm. Remove from the baking sheet and place in freezer bags. Tightly seal and label bags. They can be kept for 3-4 weeks in the freezer.

To Serve;

Preheat oven to 450o.

Remove croissants from the freezer. Place slices in a single layer on a foiled lined baking sheet that has been coated with cooking spray. Bake at 450o for 6 minutes, then turn them over and bake for an additional 5 minutes or until lightly browned.
Serve with fresh berries and maple syrup.

Notes from the Innkeeper;

At the Parish House Inn bed and breakfast in Ypsilanti, Michigan, right next to Ann Arbor, it's a cold day in January, so I thought it was a great time to try out my new bread machine. The oatmeal bread with cranberries and walnuts will be delicious toast for breakfast tomorrow...along with the cheese omelets and fried potatoes. The aroma of fresh bread is just heavenly! Rolled Oat and Pecan Pancakes served at the Parish House Inn bed and breakfast

ROLLED OAT AND PECAN PANCAKES
Yield: 6 servings

These yummy pancakes are loaded with whole grains and topped with fruit. It is a favorite with guests of the Parish House Inn.

3/4 cups whole wheat flour
1/2 cup all purpose flour
1/2 cup rolled oats
1/4 cup oatmeal
1/2 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
a generous dash of ground nutmeg
1/3 cup butter, cut into pieces
2 eggs
2 cups buttermilk
1/4 cup honey
1/2 cup pecans, chopped
warmed maple syrup

1. In a food processor, combine whole wheat flour, all purpose flour, rolled oats, cornmeal, baking powder, baking sod, salt and nutmeg. Add butter and process until mixture resembles coarse meal.
2. In a separate large bowl, beat eggs and buttermilk, then beat in honey.
3. Stir in flour mixture and stir until well mixed. Fold in pecans. Let this mixture sit for 5 minutes to allow flours to absorb liquids.
4. Preheat griddle to 350o. Spray surface with cooking spray before ladling batter onto griddle. Flip pancakes when bubbles appear on the surface and cook until done.
Serve with warm maple syrup...enjoy!
