December Recipe of the Month: Cranberry Scones with Cranberry Butter

This is our favorite Holiday scone recipe at the ParishHouseInn. I hope you enjoy it as much as we do!


Cranberry Scones
with Cranberry Butter

3 cups flour
1/3 cup sugar
s 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 sticks chilled butter, cut up
3/4 cup dried cranberries
1 teaspoon orange zest
1 cup buttermilk
Glaze;
1 tablespoon cream
1/2 teaspoon cinnamon
2 tablespoons sugar

Preheat oven to 400 degrees
In a large bowl, stir together dry ingredients. Add butter and beat with electric mixer until well blended and resembles corn meal. Add cranberries and orange zest, and stir to mix. Add buttermilk and mix until blended. Father dough into a ball and divide in half. On a lightly floured noard, roll into 2 circles about 1/2 to 3/4 inch thick. Cut each circle into 8 wedges, and place on a baking sheet that has been coated with cooking spray. Bake for 12 -15 minutes or until golden.
Remove from oven and brush with glaze

Cranberry Butter

1 stick (1/2 cup) unsalted butter, room temperature
2 tablespoons coarsely chopped cranberries
2w tablespoons light brown sugar
1tablespoon honey
1/2 tablespoon ground walnuts
1 teaspoon each orange zest and lemon zest
1 tablespoon buttermilk

In a large bowl, whip butter at high speed with electric mixer until pale yellow. Add all ingredients except buttermilk and whip until mixture is light pink. Add buttermilk and whip until incorporated.

Ypsilanti is sixth most affordable college town by Coldwell Banker Real Estate



A new study by Coldwell Banker Real Estate reveals that many students and their families are opting to purchase houses in college towns rather than pay for dorms, reports Forbes.

To determine rankings, Coldwell Banker looked at the list prices of houses in 120 college towns, which had at least 6 homes available for purchase between April and September of 2010. Forbes gives the fifteen most affordable college towns

Baked Spicy Pears in Cranberry Sauce ..a recipe from the Parish House inn cookbook

BAKED SPICY PEARS IN CRANBERRY SAUCE
..An easy seasonal breakfast treat or dessert

1 can (16 ounce) whole-berry cranberry sauce
1 tablespoon fresh lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
6 medium ripe pears, peeled, cored and halved or sliced

Combine cranberry sauce, lemon juice, cinnamon, and ginger in a small saucepan. Bring mixture to a boil over medium heat, stirring often. Remove from heat.

Place prepared pears in a 9 X 13 inch glass baking dish or 2 1/2 quart casserole. Pour the cranberry mixture evenly over the fruit. Cover with aluminum foil and bake in 350 degree oven for 40 - 50 minutes or until pears are tender. Let cool and the refrigerate.

Serve with vanilla yogurt and granola if desired. Halved pears can be sliced lengthwise, and fanned out on a small plate, then topped with more of the sauce. This makes a beautiful presentation.

Cinnamon Breakfast Apples now being served at the Parish House Inn

Cinnamon Breakfast Apples

Yield: 4 servings

This is a wonderful and easy recipe for cooking apples to serve for breakfast or dessert. Use a cooking apple like Rome beauty because it doesn't break down to a mush. This dish should keep the bite - size shape after cooking.

1 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon cloves
4 or 5 large cooking apples (about 1 1/2 pounds)
2 tablespoons water

1. Combine sugar and spices.
2. Peel and core apples.
3. Chop apples into bite size pieces and layer in a 4 cup measure alternately with sugar mixture.
4. When there are 4 cups, put apples and water into a medium sauce pan.
5. Cover and cook over low to medium heat, stirring occasionally, for 15 to 20 minutes or until apples are tender.

Serve warm or cold. This will keep in the refrigerator for several days.

Hay rides are a great way for families to celebrate autumn.

If you're looking for fall fun, Ypsilanti has plenty to offer. Read on for the details on everything from costume parties to Oktoberfests to apple- and pumpkin-picking and more.

The embodiment for fall-related fun in the area is Wiard’s Orchard in Ypsilanti Township. Among the many possibilities for enjoying an afternoon are a cider mill, pumpkin-picking, apple-picking, hay rides, pedal tractor racing, a petting farm, a corn maze and much more.

By night, Wiard’s transforms into The Night Terrors Haunted Thrill Park. Choose from six scary activities, such as the Labyrinth Haunted Corn Maze, Hayride of The Lost or Scareyoke.

Amore low-key venue for picking pumpkins and apples throughout the season is Wasem Fruit Farm on Judd Road. The farm is open daily 9 a.m. to 6 p.m. Once you fill up on cider and homemade doughnuts, head next door to the Talladay Farms Corn Maze, which also offers bonfires for larger groups in the evening.

Ypsilanti is well known across the region for its antique car shows, and one of the more unusual is the last show of the season on Oct. 3. The Southeast Michigan Antique Truck Show in Riverside Park is free and runs from 9:30 a.m. to 3:30 p.m. Organizers say it will feature roughly 40 trucks, including a 1924 Garford flatbed, antique fire trucks, a 1930 Model A Gas Tanker and much more.

“It’ll be exciting -you’re going to get a real cross-section of trucks,” Jack Miller, owner of the Heritage Auto Museum said.

Stop by the Corner Brewery on Oct. 2 at 7 p.m. for the annual "Imagine. A John Lennon Birthday Concert Fundraiser." Local artists Chris Buhalis, Jo Serrapere, Danny Kline, Ypsitucky Colonels and many more will perform John Lennon songs, and the $10 admission will go to support the Veterans for Peace “Peace Scholarship Program”. The scholarship assists students involved in an accredited peace studies program. The event is endorsed by Lennon’s wife, Yoko Ono.

If you like beer, costumes and rock and roll, drop in to the Corner “Boo-ery” on Oct. 30 for their Halloween costume party. Admission includes food and music provided by Manhole UK.

For a more family-oriented Halloween party, check out the Ypsilanti Downtown Halloween Party on North Washington Street on Oct. 29 The event is free and runs from 5 to 7 p.m. There will be music, games, a costume contest and candy for kids under 12 years old.

After the party stop by the Dreamland Theater at 26 E. Washington St. will present the puppet adaptation of Stephen King’s “Children of The Corn” on Oct. 29 and 30 at 7:30 p.m. and prior to the party the Ypsilanti District Library will hold "Scary Story Time" at 4:30 p.m.

The Parish House Inn has made some changes to accommodate families and people traveling together sharing a room. Please go to our website to check availability and to book online.

The first photo is room 3. There are now 2 twin beds and it can also be made into a king size bed for couples.

Room 4 is the second photo. A twin size bed has been added, which will accommodate a third person in the room. It also makes a nice daybed.
The queen size four poster bed and back of house location makes this one 0f our most popular rooms.

In the third photo, room 9 shows a king size bed and a new sofa bed, which will accommodate
a third person sharing this room. With the 2 person jacuzzi tub, it is still our most popular room for romantic escapes and wedding nights.

Strawberry Rhubarb Crunch


The dark brown sugar and nuts in the topping gives this a flavor boost!

3/4 cup granulated sugar
2 tablespoons all purpose flour
1/2 cup water

2 cups sliced strawberries
2 cups coarsely chopped rhubarb

1 cup rolled oars
1/2 teaspoon cinnamon
1/2 cup dark brown sugar
1/4 cup softened butter
1 cup chopped pecans or walnuts

Preheat oven to 350. Coat a 9X9X2 inch baking pan with cooking spray.
In a 1 quart saucepan mix together sugar and flour, Add the water and stir. Cook over medium heat until thick. Remove from heat and stir in fruit. Pour into prepared baking dish.
Mix together oats, brown sugar, cinnamon and butter. Sprinkle oat mixture evenly over the top of the fruit mixture.
Bake for 30 minutes or until the filling is bubbly in the middle.
Serve warm with cream.

Rhubarb Bread

A delicious way to use fresh rhubarb.

1 1/2 cup firmly packed brown sugar
1 cup buttermilk
2/3 cup cooking oil
1 egg
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 1/2 cups chopped fresh rhubarb
1/2 cup chopped nuts

Topping
1/2 cup sugar
1 tablespoon sugar

Preheat oven to 325o. Coat two 8x4 inch loaf pans with cooking spray.

In a large bowl, blend brown sugar, buttermilk, oil and egg until smooth. Add flour, soda, salt and vanilla and stir gently to mix well. Stir in rhubarb and nuts.

Pour into prepared loaf pans. Combine topping ingredients until crumbly and sprinkle over batter. Bake for 60 -70 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool in pans for 10 minutes. Remove carefully and cool completely. Enjoy!

Easy Banana Blueberry Muffins


This takes advantage of over-ripe bananas and the seasons
fresh blueberries to make a delicious muffin.....enjoy!


1 large egg
1/2 cup buttermilk
1/2 cup oil
1 large ripe banana
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoons baking soda
1/2 teaspoon salt
1/3 cup sugar
1 1/2 cups blueberries ( fresh or frozen)

Preheat oven to 400o. Coat a 12 cup muffin pan with cooking spray or line with paper liners.

In a blender, mix egg, buttermilk, oil and bananas until smooth.

In a large bowl stir together flour, baking powder, baking soda, salt insugar. Add the buttermilk mixture and stir together until just mixed. Gently stir in blueberries. Divide batter among the muffin cups.
Bake 20 - 25 minutes or until a tester comes out clean. Serve warm or at room temperature. These freeze well.

Spring Strawberry Muffin recipe featured at Ann Arbor/Ypsilanti area Parish House Inn B&B

These delicious muffins use the fresh strawberries now arriving in grocery stores. Enjoy them with breakfast or for afternoon tea.

At the Parish House Inn , these appear on the breakfast table often while strawberries are in season.....we hope you enjoy them!



2 cups prepared strawberries*
2 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg
3/4 cup sugar
2 eggs
3/4 cup milk
1/2 cup butter, melted and cooled
grated rind of 1/2 orange
1 teaspoon vanilla
1/2 cup strawberries
1/4 cup sugar mixed with 1/4 teaspoon grated nutmeg

*To prepare strawberries; chop by hand and mix with 1/4 cup sugar and 2 tablespoons orange juice. Let sit for 2 hours or overnight to develop flavor.

Preheat oven to 375o. Line a 12 cup muffin tin with paper liners.

In a large bowl, mix together flour,baking powder, salt and nutmeg. Stir in sugar and make a well in the center.

In another bowl, beat eggs, milk, melted butter, orange rind and vanilla until well mixed. Then stir in the crushed strawberries. Pour this into the dry ingredients and lightly stir together, until blended. Do not over mix.

Drain the prepared berries and fold lightly into the batter. Spoon into prepared muffin tin, filling almost full. Sprinkle each with the sugar and nutmeg mixture.

Bake until golden brown and a toothpick comes out clean, about 25 to 30 minutes. Remove from oven to a wire rack and let site for about 2 minutes, then remove and cool. Serve warm or at room temperature.

Easter brunch recipe; Asparagas & Egg Casserole

This an easy dish to serve with your brunch, anytime...enjoy!
Asparagas & Egg Casserole
Use up those hard cooked Easter eggs in this delicious side dish with baked ham.
2 cups asparagas, cut into small pieces cooked
4 eggs, hard cooked and sliced
1 cup, 4 ounces shredded cheddar cheese
1 - 3 tablespoons butter
1 (103/4 ounce) can condensed cream of mushroom soup
1 tablespoon sesame seeds
10 biscuits, unbaked:these can be from a can in the dairy section or freshly made
Preheat oven to 375o.
In a 9X9 square baking pan, layer half the asparags,eggs and cheese. Dot with 1 tablespoon of butter. Top with half the soup. Repeat layers. Bake for 15 minutes or until bubbly.
Sprinke sesame seeds on a plate and press the tops of the biscuits into the seeds. Arrange biscuits, seed side up over the hot mixture. Return to oven and bake an additional 18-22 minutes, or until biscuits are a deep golden brown.
Serve this hot from the oven.

Long-time friends and fellow artists, Bonnie Penet and Leslie Leland, had for years dreamed of having a store-preferably in Ypsilanti-preferably on Michigan Avenue. When the space adjacent to What Is That Gallery became available, it seemed like the perfect place. Within weeks of opening, though, Mix was outgrowing its physical boundaries. Good fortunate struck again, when Leslie and David Austen offered to swap storefronts, giving Mix roughly twice as much space as before. Both Bonnie and Leslie say they love being downtown, working with the other downtown merchants.



Now, only three months old, Mix is humming with business and bursting with wonderful finds. Although as much as 70-80% of their business is in clothing, you can find beautiful jewelry, whimsical art, unique home goods and so much more. You really have to experience Mix in order to appreciate the variety and quality of items offered.

Michigan Baked Oatmeal Recipe

This is my most requested recipe and my signature dish. It makes a hearty breakfast during these cold winter months. You can make it ahead and the microwave it in the AM.

MICHIGAN BAKED OATMEAL
Yield: 6-8 servings
2 cups old fashioned oats
4 cups milk
1/2 teaspoon almond flavoring
1/4 cup brown sugar
1/2 cup sliced or slivered almonds
1/2 cup dried cherries
1 large apple, cored, unpeeled and shredded
1. Preheat oven to 400 degrees.
2. Coat a 3 quart casserole or 8X8 inch baking pan with cooking spry.
3. in a mixing bowl, combine all ingredients.
4. Transfer to the baking dish. Sprinkle additional almonds on the top if desired.
5. Bake uncovered for 30-45 minutes. It will be bubbly in the center when done. Let sit for a few minutes before serving. As it cools, any excess liquid will be absorbed. You may want to add a little liquid when reheating.
