Parish House Inn recipe for Orange Croissant French Toast


This recipe is made when you have time, frozen and then baked and served when you want. At the it is topped with fresh strawberries, raspberries and blueberries and a sprinkling of powdered sugar, which makes for an elegant presentation. Enjoy!

ORANGE CROISSANT FRENCH TOAST


4 egg
5 ounces evaporated milk
1/2 cup orange juice
1 tablespoon grated orange rind
1 tablespoon sugar
6 large croissants, 1 day old, split in half

In a shallow dish, combine eggs, evaporated milk, orange rind, orange juice and sugar.
Dip both sides of the croissant in the egg mixture. coating thoroughly.
Place slices in a single layer on a baking sheet that5 has been covered with foil. Place in the freezer for 30 minutes or until firm. Remove from the baking sheet and place in freezer bags. Tightly seal and label bags. They can be kept for 3-4 weeks in the freezer.

To Serve;

Preheat oven to 450o.

Remove croissants from the freezer. Place slices in a single layer on a foiled lined baking sheet that has been coated with cooking spray. Bake at 450o for 6 minutes, then turn them over and bake for an additional 5 minutes or until lightly browned.
Serve with fresh berries and maple syrup.

Notes from the Innkeeper;

At the Parish House Inn bed and breakfast in Ypsilanti, Michigan, right next to Ann Arbor, it's a cold day in January, so I thought it was a great time to try out my new bread machine. The oatmeal bread with cranberries and walnuts will be delicious toast for breakfast tomorrow...along with the cheese omelets and fried potatoes. The aroma of fresh bread is just heavenly! Wish you were here...

Rolled Oat and Pecan Pancakes served at the Parish House Inn bed and breakfast

ROLLED OAT AND PECAN PANCAKES
Yield: 6 servings

These yummy pancakes are loaded with whole grains and topped with fruit. It is a favorite with guests of the Parish House Inn.

3/4 cups whole wheat flour
1/2 cup all purpose flour
1/2 cup rolled oats
1/4 cup oatmeal
1/2 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
a generous dash of ground nutmeg
1/3 cup butter, cut into pieces
2 eggs
2 cups buttermilk
1/4 cup honey
1/2 cup pecans, chopped
warmed maple syrup

1. In a food processor, combine whole wheat flour, all purpose flour, rolled oats, cornmeal, baking powder, baking sod, salt and nutmeg. Add butter and process until mixture resembles coarse meal.
2. In a separate large bowl, beat eggs and buttermilk, then beat in honey.
3. Stir in flour mixture and stir until well mixed. Fold in pecans. Let this mixture sit for 5 minutes to allow flours to absorb liquids.
4. Preheat griddle to 350o. Spray surface with cooking spray before ladling batter onto griddle. Flip pancakes when bubbles appear on the surface and cook until done.
Serve with warm maple syrup...enjoy!
